Preheat your oven to 165C
Prep the butter
The first step of most cookie bases is to cream the butter and sugar together.
Creamed butter
- Cut butter into small pieces, around 1 cm. Keep the butter relatively cool, around 60F!
- Combine butter and sugars into the bowl of the stand mixer
- Beat until the sugar is fully incorporated, and the butter begins to get light and fluffy. About 5 minutes
- Add the eggs, beat until smooth (another 2-3 minutes)
Fold in the flour, baking soda, baking powder, salt, and cinnamon to the creamed butter
At this point, be careful to not overmix the dough.
Add oats, half at a time, folding to fully incorporate
Add dried fruit, half at a time, folding to fully incorporate
Portion the dough into ~50g balls
Bake for 12-15 minutes until the edges are crisp.
The guideline I use is there should be cracks on the surface of the cookie, and they should look slightly damp but not wet.
