Oatmeal Cookies

Instructions

  1. Preheat your oven to 165C

  2. Prep the butter

    The first step of most cookie bases is to cream the butter and sugar together.

    Creamed butter

    1. Cut butter into small pieces, around 1 cm. Keep the butter relatively cool, around 60F!
    2. Combine butter and sugars into the bowl of the stand mixer
    3. Beat until the sugar is fully incorporated, and the butter begins to get light and fluffy. About 5 minutes
    4. Add the eggs, beat until smooth (another 2-3 minutes)
  3. Fold in the flour, baking soda, baking powder, salt, and cinnamon to the creamed butter

    At this point, be careful to not overmix the dough.

  4. Add oats, half at a time, folding to fully incorporate

  5. Add dried fruit, half at a time, folding to fully incorporate

  6. Portion the dough into ~50g balls

  7. Bake for 12-15 minutes until the edges are crisp.

    The guideline I use is there should be cracks on the surface of the cookie, and they should look slightly damp but not wet.
